I just bought the 6 scallop pan set w/c is hand made in Australia..I know this looks very similar to the Petal pan..I tried my pan last week. I crumb coated and I put Fondant over it, and it came out perfect..I don't know if you're putting Fondant on your cake. The curvey parts are kind of tricky. Your just have to have a consistent amout of icing on each petal. How about using a small spatula or a marrow thin knife. that might help you have more control when going around the curvey areas. icon_smile.gif

This may be a bit odd. Instead of using the icing tip try tip 1D. I found I have more control. It doesn't get as much icing on and if it isn't enough you just do it again. It does slow you down a bit though.
