how far (days) in advance can you make a cake and it still be okay? my dd's party is on Sat morning, so wondering when i can start. I'm using a box mix if that affects anything... thanks
You can make cake and icing now. freeze cake frige icing.
or
I would think if you baked and iced it tomorrow it would be ok for Sat.
Grocery stores and bakeries usually have them out for a couple of days
anyone else????
I do all my baking Thursday (just got done!) for Saturday and Sunday. I freeze cakes for Sunday, and decorate Saturday's cakes, on Friday. They are are boxed up and ready for pick up Saturday morning.
OMG!!!!! I am a dork!! Today's Thursday.
I think you are safe to bake today and even decorate it you wanted!
I do mainly scratch cakes but have done box cakes occasionally.
My personal preference is to bake a cake and let it sit overnight covered airtight at room temp. I like to let them set real good before decorating them.
Then the next day, I fill and ice and decorate.
so i don't need to freeze it? keeping it in the refridge is good enough? and should i wait to frost it?
Wrap well in plastic wrap (don't refridgerate), and let it sit overnight. It's good to let cakes do this, rather than ice right away. They have a chance to "settle". I find refridgerating unfrosted cakes, can sometimes dry them out.

There is really no need to refrigerate. Keep them well wrapped or covered in air tight cake keeper or container at room temperature.
sorry more questions....
i didn't get to make my cake until today. If i decorate it then it will no longer fit *i don't think so anyway* under the lid of my plastic cake holder (i'm sorry i'm not good with the lingo). How will i store it until tomorrow morning? With eggs etc in the mix i'm concerned....

Once you decorate the cake, the icing seals the cake inside, so you don't have to store it airtight. YOu can put in a cake box if you have it or cover it as best possible, not airtight, just to protect it from dust or anything else flying around...
