I'm looking for a recipe for chocolate whipped cream that I can use for frosting the cake and making a basketweave around the sides. Anyone got one? TIA!
Have you tried the chocolate Bettercream? It is in the frozen foods department at GFS, Sam's Club, or maybe an area cake supply store.
There's a recipe on this site; go to:
http://www.cakecentral.com/cake_recipe-2041-0-Chocolate-Whipped-Cream.html
Is the recipe from this site stable enough for basketweave? I've never done it in whipped cream before so I'm a little nervous. As for the Bettercream, there isn't anywhere around here to buy it.
Thanks!
I haven't used the recipe yet; sorry. Try it with less liquid. Also, add some piping gel to help hold its shape, if necessary. Let us know how it works.
I don't know where you live. But in the western states, the equilivent of Bettercream is Frosting Pride and Pastry Pride. I get mine at Smart and Final. Also, you might try Baking 911 on the net to come up with a recipe.
Yes, it has to be chocolate whipped cream. This was the brides request. Any idea how much piping gel to add to make the icing more stable?
For the piping gel, I would start with 1 teaspoon for each cup of frosting. Add more, if needeed.
You could also see if you can get Chocolate Frostin' Pride near you... It's a non-dairy whipped icing. I get it Smart-n-Final. It's very similiar to Bettercream.
I would recommend you go to baking911.com as fearlessbaker suggested. There is a recipe for whipped chocolate ganache that can be used for piping & making decorations. She walks you through the steps to make sure the icing is the correct consistency to decorate with. Here's a link to one of the pages on the choc. ganache: http://baking911.com/recipes/chocolate/ganache.htm
Well, I definitely didn't enjoy this one. I found the whipped cream to be very hard to work with. Maybe I did something wrong but I'm going to try my hardest to avoid it in the future.
