New at making roses, which is the best buttercream recipe to use for them when just starting out....I know the consistency should be stiff. (Sorry, never took a class).

I don't know/use any fancy buttercream recipes- when I got started years back I asked a baker what she used for all decorating and she said the recipe in the Wilton books. So that's what I use, only I do all Crisco so my decorations, especially flowers, stay stiffer on the cake. So my recipe, if you want a simple one for start, is:

1 cup Crisco
1 tsp clear vanilla extract
1/2 tsp butter flavoring
4 cups powdered sugar
1-3 tbsp milk

This is a single batch, but I always mix it doubled. When I'm going to make roses, I mix it especially stiff (just use less milk), and then I thin it down a litltle with Light Karo Syrup (this makes the petals come out smoother).
