Fruit For Filling?

has anyone used fresh or canned fruit for a cake filling? i need to make a cake with fruit filling for next friday. what kind of fruit works best?

Hi!! I have used fresh fruit. People love strawberry. I take strawberries and chop them up fine. If they are not sweet enough, add a bit of sugar and let sit for a while---then drain. I mix them with strawberry glaze. It is usually in the produce section. I get mine at walmart. You could use any fresh berry you want. There is also a peach glaze that is sort of golden color, if you do not want red, depending on your fruit. I would imagine you could thaw frozen berries and chop and add sugar and drain if you wanted. The fresh straw. is beautiful in white cake, too. Hope that all made sense!!!! LOL icon_lol.gif
