Well, I tried the stacked cookie cake, and it worked! Thanks to everyone who encouraged me to give it a go, here are some pics!

This is wonderful!!
My husband doesn't care for cake but loves his cookies.
Did you bake cake sized cookies and then stack them with icing between ''layers'' as you would cake?

What was the gist of your cookie recipe, like all butter or shortening, etc? I'm wondering what you did to ensure they stayed soft enough to cut. Maybe just being encased in icing was enough? I think I'm going to try this for my birthday in a few weeks. Thanks for the idea!

It looks like she just made the big cookies, instead of their own special pan or a pie pan, maybe she put them in an actual cake pan and baked them. I've made "cookie pies" in cake pans before.

That looks like it would be really good!!! I have relatives that don't like cake but they sure eat cookies; so this would just be a wonderful alternative...
