I was wondering how much cake mix do some of you use in your 9-inch round Wilton pans.
Everytime I have made cakes in them, they don't come out very thick. So just wondering if maybe I am not getting enough mix poured in each pan.

I've never measured how much batter, but I use two doctored mixes when I make 9" cakes. I like my cakes nice and high and one mix doesn't cut it. I would use the extra batter to make cupcakes or sample cakes.

I just ran into this today...used one doctored mix with the cake extender and the cakes were pretty flat. I re-made them with 2 doctored mixes and they are the perfect height.

That must be the problem. I am just using one mix and the cakes are always flat. Going to rebake the ones from last night with two mixes and try try again.

I most definitely agree......one mix is not enough for two 9" cake pans.

I guess if you need it after you made this mistake, you could tort them.

I had the same problem and using 2 mixes makes a huge difference.

I use a 9" round that's 3" high and I use one mix with the extender recipe on here and it works perfectly it rises just above the pan and when it comes out I put a cookie sheet on top of it and smash it down level with the sides of my cake pan and hold it for a min. then remove it and my cake is perfectly level and exactlly 3" high..........which when it's torted almost looks like a 2 layer cake with a lot less effort since I only have one of each of my sizes of pans

ninkysue, this is the extender recipe I use and I just love it, especially love the extra battericon_smile.gif

1 cup plain flour
1 cup sugar
1/3 teaspoon salt
1 egg
1 cup sour cream
1 teaspoon vanilla

Here's something else I found on Wilton's website

You add all the ingredients of your regular boxed mix recipe.

Then you add:

1 cup flour
3/4 cup sugar
2/3 cup milk/water
1/2 cup oil
1 tsp. baking powder

1 cake recipe with the extender will fill (2) 9" pans.
1 cake recipe with the extender will fill (1) 12" pan.
