Just wondering if I can put cupcakes on 2 different racks and switch them part way through baking? I need to make 200 and need all the time I can get to decorate!!!

I JUST MADE 6 DOZEN EARLIER TODAY AND BAKED 2 DZ AT A TIME. I WOULD OF DONE MORE, BUT I ONLY HAD 2 PANS. I PUT THEM ON DIFFERENT RACKS AND PUT ONE ON THE LEFT SIDE AND ONE ON THE RIGHT SIDE.I CHANGED THEIR POSITIONS ONCE HALF WAY THRU. THEY CAME OUT FINE. I'M SURE YOU COULD DO 48 AT A TIME.....

pretty sure you can! I've done it with cookies before. Just keep checking them (in the first batch) to see how much time they need....you might need to bake a little longer if you're going to be switching racks though. Plan for a few test cups in case the first batch doesn't work.

I usually make 24 at one time side by side in the oven on the middle rack. I was going to borrow some pans for that day if I can make 48 at one time! I am a little concerned that they might fall when I switch them from top to bottom because of the temperature change. I'm not sure that my mixer will be able to handle a double batch, but I'll probably do some testing in the next week or so. I'll let you know how it turns out!

When I'm baking cupcakes, I have three pans on three shelves, I switch the top and bottom one coming near to the end of the cooking time, central one always seems to be fine, I have a fan oven though so maybe thats why, but my cupcakes always are fine no matter which rack they are baked on.

Like that I kinda put them in so that the top one is mostly to the left, the middle to the right and the bottom one to the left again.

I always bake on top and bottom shelves of my oven with sponge cupcakes or even mudcake ones and swap shelves half way thru baking and to date none have sunk. If you do the switch quickly, they shud be fine as they are so much smaller than a normal cake.

Thanks for all your responses! Doing 48 at a time will make it much easier to have 200 fresh cupcakes!
