Wedding Cupcakes - How Early?

How early can you make the cupcakes before they are eaten without them getting dried out? I am trying out recipes but I was hoping to make them 2 days before the wedding to give me the day before to decorate and I need to deliver in the morning the day of. I am going to bake them and then put the base icing on and cover them over night (hoping to keep some extra moisture in) and do decorating the next day. Will this work?

Sorry - this will be my first big order and I'm stressing myself out about it! I'm such a perfectionist (not a good thing!) and I really want to make a good impression. Thanks for any and all help - it is greatly appreciated!

I would try to put them in the fridge, if at all possible. I don't think 2 days before is too soon, it should work fine. I would just refrigerate them if you can, just to be on the safe side.

The smaller the size of the spongecake you make...the faster those little buggers dry out. The fridge helps, but they aren't fluffy and fresh after a day or so.

I have to make my wedding cupcakes the morning OF the wedding to keep them soft and moist by evening. Mini cupcakes are even worse. The Vanilla and Lemon recipes become drier within 20 hours or so. Chocolate seems more forgiving.

If it were me, I'd use an oil-based cake that far in advance. Red velvet, Banana Cake and Carrot Cake seem to retain moistness SO much more than light Chiffon, Spongecakes, etc would.

I ate a Carrot cupcake from the fridge yesterday that had been in there for 5 days and it was deeeelish!

I agree with Antonia. I have my first order for a Cupcake Wedding Cake in April. Each one will have a different flower on it (Bride choose 3 different ones) I will make the flowers way ahead of time. But I won't bake the cupcakes til that morning. For me, even when I make them for a party at home, I only like cupcakes the day of. They just don't seem as fresh after one day. Helen

going a little off subject, but how much would you charge for 75 cupcakes?

Personally, I would bake them as late as you can, as I also have found cupcakes dry out faster then regular cake...

I just did 40 cupcakes for a Baby Shower and charged $1.25 each. They were decorated with BC frosting and a chocolate baby decos.
