Cake Balls/cake Truffles Pricing Question

Hi everyone,

I have been making cake balls for several years now, but it has primarily been for personal/family use. Every once in a while I would actually sell them to a customer, but it was usually in addition to a cake.

I recently donated 500 individually bagged with business cards for a women's meeting sponsored by a doctor I work for. The calls are starting to poor in wanting "cake truffles."

I don't have any idea what I should charge. I sell them by the dozen or 8 to a gift box with a bow.

There is also a local candy store who is interested in buying in bulk.

I usually find out cake prices in town and price my cakes accordingly, but no one else makes these, so I am stuck.

What do you guys charge?

Do you use a cake mix? Someone posted that they get about 45 "balls" out of a regular cake mix and each ball is about 2 bites. If you do cake mixes and sell your cakes, maybe you can figure a price out that way. Sorry I can't be any help otherwise. I'll see if I can find that thread.

I did see some of the previous threads, but still never got a good feel for a price.

I can usually get between 5 and 6 dozen out of one cake and then it takes about two bags of candy melts to coat them all. I would say they are 2 bites. I use a cookie scoop size ice cream scoop (it's the same size as the Wilton cookie scoop).

They are so labor-intensive -- that is where I'm not quite sure how to charge.

Hi, I wanted to share my way of cutting down the price on makeing them. Although I have not sold any.. But instead of candy melts, they are expensive.. I use semi sweet chocolate chips.. add a little vanilla ( about teaspoon) and shortening to make my chocolate.. 1 cup of semi sweets, 1 tsp. vanilla and 1 tablespoon shortening. using a double broiler.. just melt and dip your cake balls in there.. let them set in the fridge until set..I usually just use a tablespoon to scoop my cake balls.. It makes a good size bite size. Their Wonderful!! Also instead Amaretto, I have used the coffee syrup (Hazlenut and or Vanilla).. It works great!!!

I make mine about 2 bites worth and charge $8 for the first 2 dozen and then $5 for each dozen after that. I usually put mine in gift boxes, similar to 'shirt or clothes' boxes.

I really gotta try making these - I must admit I like the name "cake truffles" better than "cake balls"

All I can think of is the Saturday Night Live skit! "Everyone likes my Schweaty Salty Chocolate Balls!" icon_eek.gificon_biggrin.gif

I, too have been wondering how much I should charge for these. I like the first 2 dozen for $8 and $5 each additional dozen. I think I'll try that. A freind of mine thinks I should do an introductory price of 2/$1 through the holidays (but sell by the dozen, so $6/dozen). I guess maybe for the plain coated ones (non-decorated). What do you think?

Go to the forums and search "cake balls". You'll find tons of ideas there.
My favorite is a little over 2 cups (2 1/2? I eyeball it) white cake, 3 tbs. powdered sugar mixed with fork. In a shot glass mix 1/2 shot of milk with a dash of lemon extract(again eyeball it. Not too much, its potent) add 1/2 milk mix. to cake mix, toss with fork, add other 1/2 and toss. If this is still too crumby to form a ball, add little more milk. Use heaping spoonful and roll lightly between hands to form ball. I don't press too hard, because I like mine light-not dense. Let them sit for an hour or so, then dip in melted white almond bark (you could also use white choc).

I have made the cake balls rolled in crushed pretzels and my family loved them. I Also did crushed peppermint and that's everyones favorite.

I've been selling them to my husbands co-workers and I get $6 for a box of 10 or $20 for a box of 40 (you can see how I package them in my photos) Everyone feels that is a reasonable price and every friday I have atleast 4-6 orders. I already have orders for thanksgiving. (i offer 7 different flavors)
