Ok, I am kind of new at making wedding cakes. I made my own, but that is different. I think I have a job for a lady and she says she wants a cake for 150. Round and stacked. So, what sizes would you make? According to Wilton 14" serves 78, 10" serves 38 and 8" serves 24. That is 140. But, if I go with 16, 12 & 9" - that serves 188. Any suggestions??? Would 14, 12 & 10 look ok? That would serve 172.

Because wilton's serving sizes are so small on wedding cakes...I would make a 14, 12, 10. That would serve 173.

The 6" on top is supposed to be free, as it's the anniversary piece. So, it isn't included in the serving size.

Does everyone give away the top cake as a freebie? Or is this just a personal preference?

It is a tradition that a lot of people still carry out with.

You should probably check with the bride. Some people do not want to freeze the cake for a whole year. You could offer to bake them an anniversary tier if they'd like.

I give instructions with mine on how to freeze them properly.

What does anyone else have to say on this subject?

We give our top tier as a gift ot the bride and groom or they have the option of a cake of same size on their Anniversary.

I dont give the top tier away, no way : )
Not many people here want to keep the top cake.
They usually eat the lot at the wedding reception.
In the short time i've been doing wedding cakes (made under 20), only one bride asked for a cake to keep and it was fruit cake(urgh), and there was no way i would give that away for free, seeing how much they cost to make icon_smile.gif

I give a 6 in cake on their 1st anniversary instead of having to freeze it for a year. As long as they send me any contact changes.
14/12/10 according to my chart serves 140 I use earlenes chart which seems more accurate to me.
I used wiltons and it was off by quite a bit. You can always add a satelite cake and leave it in the kitchen till ready to serve an 8" serves 15 for a total of 155 If you go to Earlene's site she explains how she made her chart I followed the wilton chart and there did't seem to be enough cake.

wow! I got married before I got into decorating and the woman who did our cake gave us a whole extra cake for the honeymoon! It was a complete surprise. I think the one we're saving for the one-year anniv. is actually the top tier though. Guess we'll find out in October! She only charged $1.50 per serving, too....but she included the servings in the top tier - we just ended up ordering a cake for 80 and only had 50 people there.
