So I was playing around with some chocolate mousse recipes and wanted to come up with a sugar free alternative for my FIL who is diabetic. After really making a chocoalte mess I decided to try something simple since I didn't have much time left. I put a sugar free chocoalte jello pudding mix in my kitchen aid with a pint of heavy whipping cream, added a little vanilla and viola! Sugar Free chocolate mousse. He loved it! I tasted it too and it was really good. I whipped up some sugar free whipping cream with splenda and topped it with that. I just thought I would share. This would make a great sugar free filling and I bet you could even ice a cake with it.

that's so funny.......I discovered this too when I was trying the whole weight watchers thing and wanted to make my pudding stretch!!! Only I used the sugar free cool-whip, but with the addition of the vanilla, it tasted more like fresh whipped cream....and none of the guilt
