Decorating By CakesWithAttitude Updated 10 Mar 2006 , 4:22pm by CakesWithAttitude
Does anyone know of a good alternative to eggs in a duncan hines box mix? I have heard applesauce; but don't know the formula for how much. And i need to try it to see if it works. The little girl is allergic to eggs. I tried the egg replacer and it didn't work. Any recipes that are really good or box mix recipes??? Please help. I am running out of time!
What type of egg replace did you use? I've used egerG with no problem. Some other ones you might try are ground flax seeds and water, and applesause.
I used the ener g it rose then fell all the way in the pan while still in the oven. So i took it out . I found a couple of websites about 2 minutes ago with applesauce and bananas and other options. So thank you though. I will try these next. probably applesauce
I have a bride that is egg/dairy free and she suggested a product that she uses that she gets in the health food store (can't remember the name though, but maybe you could call your local store and ask them for a recommendation). Also, there are mixes by Cherrybrook Kitchen (www.cherrybrookkitchen.com) that are egg/dairy free. I used one of these as a base for red velvet for this bride and she loved it. It wasn't bad, but it wasn't as good as "normal" red velvet, IMO.
Good luck,
Suz
P.S. I thougt that the applesauce was the replacement for the oil in the cake.
I used a cake mix for a co-worker who is allergic to eggs. At her recommendation, I just left the eggs out. It was Duncan Hines chocolate and it was delicious. The texture was a bit different, but non of the others knew and they loved it cake.
so how did the cake rise if you left out the eggs? chocolate or chocolate fudge? the one with butter
For an egg replacer I usually use 2 Tbsp applesauce + 2Tbsp oil to equal one egg.
Applesauce alone usually makes the cake to sweet and oil alone to greasy.
