Does This Have To Be Refrigerated??

I am doing a cake that will be eaten on sunday, but will be baking it today - does it have to stay in the fridge? It is the williams sonoma train cake so it will not be completely iced just embellished (sp?) in icing.

recipe:

2 1/4 cups flour
1 3/4 cups sugar
2 tsp. baking powder
1 tsp. kosher salt
2 sticks butter, melted
4 eggs
1 tbs. vanilla

Based on the cake recipe that you gave, I don't think it needs to be refrigerated. The type of icing you use will determine whether or not it needs to go in the fridge. What kind of icing are you using?

I will be using just a basic buttercream icing, I have never refrigerated it before. Should I worry about it needing to be wrapped or something so that the cake does not get kind of "crispy" for lack of a better word?

If you're just using buttercream, you don't need to refrigerate it, though it may help keep it fresher until Sunday. I would try to wait until tomorrow to ice it, if at all possible. Or if you have to ice it today, maybe find a box that you can put it in and cover the box with foil ... that way, you can leave it out of the fridge.
