I'm planning on making a strawberry cake with cream cheese filling and I wanted to put fresh sliced strawberries between the layers with the cream cheese filling. When should I do this. The cake will be served tomorrow evening and I don't want the strawberries to get mushy and yucky...what do you think. Can I do it tonight or should I wait until tomorrow.
TIA

Oh....can you decorate and pipe with cream cheese icing? Its the "whipped cream frosting" from this site.

I would wait until tomorrow for fresh fruit. I'd wait until the last possible minute.

I agree with lemoncurd...the last possible moment, just to be on the safe side. Good luck icon_smile.gif

Does that mean that the leftovers will go bad quickly? Should I use some jello with the strawberries....

The left overs will not go bad quickly they just won't be at their peak freshness they will be like a thawed frozen strawberry .. still edible just not fresh

You may not have any left overs and I doubt if you do they will be there more than a couple of days and will still taste good.

I agree with above.

Probably wouldn't add jello, that would ruin the flavor of those great berries.
