Just wondering, I was asked today how to preserve the top tier of a wedding cake and have nii idea...Any suggestions?

When I got married we wrapped our top tier up really well (plastic wrap and then aluminum foil) and put it in the deep freeze. A regular freezer will work as well but it needs to be in the back away from the door if it's going to be in a freezer that is being opened and closed a lot. We ate it on our first aniversary and it was as yummy as the day we were married. icon_lol.gif

Thanks! When we were married three years ago a tiki torch spilt all over our remaining wedding cake...So needless to say storing wasnt a big concern!

Place the anniversary cake in a small cardboard box, wrap that box in several layers of plastic wrap, then in heavy duty alum. foil. When you defrost the cake, remove from freezer, and let stand at room temp, until it is defrosted. Do not remove any wrapping until the cake has had time to defrost. Then remove the foil and plastic wrap. The cake will only be as good as the freezer and the wrap job!
