Hi everyone. I'm new, so please forgive me if this has already been asked.
I made a cake for a brial shower this weekend. Acutaly it was 80 cupcakes and a 2 layer 6" cake (Cupcake tree). The 6" cake was covered in MMF. (my 1st time using it. This stuff is COOL!)

The bride to be is getting married on St. Thomas Island and wants to freeze the cake to take with her! (She doesn't like the cake that is in the wedding package she bought.) My question is, Will this stuff freeze ok. (The wedding is in 2 months) I've heard not to refridgerate it. Just wondering what is going to happen when it thaws out.

I'll post pictures as soon as they are developed. The cake was pink with chocolate decorations. I got the idea from the gallery on this site.

Hi 4, my fellow Alabamian icon_biggrin.gif ! Welcome.

Well, I probably will not be of much help but I have been told by many people not to refrigerate mmf and I do it all the time with no problems, so hopefully freezing will be okay too. Baking911 says that sometimes when frozen the fondant can weep..for whatever that is worth. I'm sure someone with more decorating experience than me will come along shortly. Hi dsoutherngirl!! Thanks for the reply! I had my 1st child in Ozark 10 years ago! Small world.

I've been reading the boards for a while, just havn't had a reason to post until now.

I think I saw on here somewhere where somebody said to wrap it in plastic wrap then foil layers before freezing and then when thawing take the foil off and leave the plastic on until it's completely thawed out........I personally have NEVER frozen fondant or even an iced cake for that matter......but I have refrig. as well with no issues

Thanks KHalstead! I wrapped it twice in Saran wrap then twice in Heavy Duty aluminum foil. I'll tell the bride to take the foil off, but leave the plastic to see how that works.

I'm sure that people freeze their anniversary top teir, but I don't know anyone that had a fondant cake. Just plain buttercream aound here.
