There are extracts and flavourings that you can buy, besides vanilla. There most defintely is lemon extract that you could add, just start off with only a couple drops and increase slowly until its the way you like. I know there was a suggestion in another thread about adding strawberry puree to buttercream. You could also try using strawberry syrup(like they sell to make strawberry milk, or for ice cream). I've even added caramel ice cream topping to my buttercream, that tasted AWESOME. Lorann oils has tonnes of flavours, there seems to be mixed opinions on here about them, but some people have had good results. http://www.lorannoils.com/

If you type in your desired flavour of buttercream into google recipes come up as well. This website has a whole bunch of icing recipes, plus filling and cake recipes that are great as well. http://www.ladycakes.com/Recipes/Frostings/frosting.htm

In my most recent class cake, I used orange flavour and it turned out really well. The icing was then spread over a chocolate fudge cake. Orange and chocolate go well together. icon_smile.gif

I have added strawberry koolaid (the unsweetened kind) to regular buttercream. To do so, I took a small bowl and mixed the koolaid packet in about tablespoon of water. This "melts" the koolaid. (If you put it in the icing dry, you run the risk of it clumping in your icing and looking splotchy.)

Reduce the amount of water in your icing by about a tablespoon, and make the icing using your regular ingredients. After incorporating your powdered sugar, SLOWLY begin adding the koolaid/water mixture into the icing, allowing it to blend fully about a half teaspoon at a time. When the icing is the color and flavor you're looking for, you can just add plain water to bring the icing to the proper consistency.

In my photos, there is a pink cake with rosette borders. This is the koolaid butter cream combination. To get the two different colors of pink, I flavored most of the batch of icing with the koolaid, then diluted it slightly to lighten it.

This made for a really nice, delicate flavor icing that the birthday girl was really happy with.

Happy mixing, and good luck!

My very favorite is to add a few tablespoons of lime curd into my buttercream and use it on coconut cake or coconut cupcakes. For weddings I have added a tablespoon of hazelnut syrup into each batch of buttercream and it added just a little more flavor. (the hazelnut syrup is them same stuff coffee shop put it fancy coffee drinks)
