Ice Cream In Place Of Oil?

How cool is that! My parents are coming over for dinner tonight so I wanted to make a quick and easy cake for dessert. I decided on the Incredible Ice Cream Cake (Cake Mix Doctor recipe). It calls for a box of cake mix, 3 eggs and 2 Cups of your favorite ice cream. No milk/water and no oil. Can't get any easier than that. I'm using Private Selection Butter Pecan Ice Cream...good stuff with lots of pecan pieces. Can't go wrong. I've got it in the oven now so I'll let you know how it tastes. Love that book! I love that book as well. I have gotten a ton more comments on my cakes ever since I started using that.

Well...the cake turned out just like a cake should. I didn't like the flavor though. The pecans got a little too concentrated and toasty tasting. The cake also wasn't as moist as my cakes usually are. I guess when you replace oil with ice cream...that might happen. I haven't given up on it though. Next I'm going to try chocolate chip cookie dough icon_smile.gif .

Just a thought, plain ice cream flavors might do better since whatever you put in your batter is going to be baked. Your chocolate chip cookie dough might bake into cookies! LOL Janice

LOL Janice! I was watching a Ben & Jerry special and they said people have actually taken the dough out of their ice cream and tried to bake it! It doesn't work though because their isn't any levening or baking soda or something like that. Cake Mix Doctor recommend using Cherry Garcia so I might try that too.

The cake was actually much better this morning. It was moister too.

Hmmm, it might be one of those cakes where the flavors have to meld a little before it tastes good.
Mmmmm, ben and jerry's ice cream, that is the only ice cream bought from a store that I like to eat. It's mainly real ingredients, and not a ton of air pumped into like the generic stuff. Aside from sherbet, it's the only ice cream we buy at our house. Yummy!

ohhh my favorite is the Heath icecream from Ben & Jerrys. Yummy!!!!
