Need Pricing Advice!

I've been asked for a quote for 90 mini 3-tier cakes. I've never done a large order like this and have no idea how much this would cost, nevermind how much I should charge! I would do white poured fondant with minimal pink decorations. Could someone PLEASE give me some sort of ballpark figure?? Thank you!!

take the going rate for 1 serving of wedding cake and multiply by 90.

then add at least 20% more to account for it being lots of individual baking and decorating.

so if going rate is $2/serving that equals $180 + $36 for a total of $216 (and of course I'd round UP to $225)

i could see even justifying $3/cake for $270

I agree with Doug--$3.00 a serving. That is alot of work. Give me a big ol' wedding cake any day!

Wow, I wouldn't bake and decorate a mini-tiered cake for $3, I think they are harder than a regular size cake!

I have only used the mini cakes for practice and for gifts, etc., so I'm not sure how much they are going for, but certainly not for $3, maybe somebody else will know how much. Janice

surfing around the net, i've seen the pro bakeries getting $5 and even more for each mini. (hmmm...I wonder what a collete would get?)

More than the average baker/decorator, I'm sure!
You'd pay more for her name, and some "understudy" would do the work!

After the first few of these little cakes, as cute as they are, I decided I'd rather do regular sizes any time! The thought of doing 90 of them would send me into trauma time! My hands are too big or something, and I was forever sticking my fingers into the icing where they shouldn't be! Janice

Thanks for the advice! I've never even done a mini cake, but I have total confidence that I could pull it off... however, the stress factor that I'm sure I'm underestimating, is keeping me from making up my mind. Did I mention they want a big cake on top of it all? I mean, if there was some way to make cakes in advance, then maybe... but I prefer my cakes to be fresh!

How much freezer space do you have? Some people here don't like the idea, but quite a few including me, freeze our cakes, before finishing them off. By my guestimation, you'll need at least 2 days baking the small cakes, minimum.

How are you working with poured fondant? Is there something you need to learn to do going in to this order? You have to take that learning time into account too, even if you don't charge for the learning part.

Ofh, and don't hesitate to buy more mini cake pans. They'll come in handy. Yet another price to keep track of.

Mini cakes take alot of work. I would definately go no lower than $3-$5 per cake.

Having done the mini cake thing quite a bit, I have discovered that they are a pain and would definetly not charge $ 5.00. Here in Canada I get no less than $ 15.00 per cake!! They are very time consuming even though they look relatively "easy". I tried to attach pictures for you to see, but a computer wiz I am not. If you want to pm me I can send them to you. Since this topic is kind of in the idea of my question I shall ask it here.

I have an order for 50 mini two tiered cakes. If any of you have the Wilton 2006 yearbook, the exact cake is in there. I think its the title page for the special occasion cakes. It's done with poured fondant, fondant flowers (although I'm probally going to do them as Royal Icing drop flowers) and a fondant ribbon. Pretty simple, but time consuming I know. Anyways, I was thinking of pricing them at 3$ cdn/cake. I haven't given her the exact price so there is room for playing with. Do you guys think that this is a fair price or should I mark it up a bit more? Thanks in advance for your help with this...

It looks like they are 2" and 3" sizes. I would charge about $ 5-6 each one. To me $ 3.00 is way too low.

The cakes are actually only 2" and 1". They are also using a cake mix because they really need to keep costs down. I am going to try to make a few and see what kind of time it takes and then figure it out.
