I'm looking for a peanut butter filling for my dark chocolate/pb brownies. I've tried pb and confectioners sugar w/graham cracker crumbs, which gave me the best taste and texture w/no greasiness but it was hard to spread. I want it to be a thin filling and not really "obvious" if that makes any sense. (I don't mind if some of it melts into the brownie itself during baking.) I guess what I'm saying is that I don't want people to bite into a big hunk of pb - I'd like it to be more subtle. I hope someone knows what I mean! LOL
Just a suggestion maybe you could thin the peanut butter with a little corn syrup. I dont know if this would work or not.
This is the peanut butter filling I use for cakes. Not sure if it would work with your brownies, but....
Peanut Butter cup filling
1 cup smooth peanut butter
1 cup powdered sugar
1 Tablespoon soft butter
1 teaspoon Vanilla
Mix all ingredients on low speed till combined.

I think the filling will become greasy when baked. I tried pb, butter and confec. sugar on my first try and while it tasted great, it made the brownies have a greasy texture. When I make the brownies, I spread a layer of batter on the bottom of the pan and then put the layer of pb and then another layer of batter. Thanks for the help , though!
I haven't tried this for brownies, but would it work to bake the brownies
then do your layered filling? Sometimes I use chopped Reese's p.b cups
mixed with the p.b. & conf sugar & thinned with heavy cream for a filling.
Kids love it.
