Carrot Cake Mix Extender

Does anyone have a recipe for a cake mix extender for a carrot cake? Or has anyone used the cake mix extender listed on this site for a carrot cake? I was worried that it might lessen the carrot flavor of the cake... although i suppose I could just add soem extra shredded carrots... I'm not good at altering recipes!!! I don't need enough to make 2 full cake mix boxes but I need just a little more than what 1 box will give me.....
Any ideas??

I've never tried it with the carrot cake mix, but if I were, I'd only add extra spices (cinnamon, cloves, nutmeg). I'd probably stay away from the extra carrots as they might be too moist....not sure. Don't think you can go wrong with the added spices. It will extend the flavour and the mix. Good luck with it. If you do try, let us know how things turned out. I'd love to know icon_smile.gif

Well, here's what I did & I think it turned out really good. It's very moist & flavourful I think.

1 carrot cake mix box
2 c. finely shredded carrots
4 eggs
2/3 c water
1/2 c oil
3/4 c sugar
1 tsp baking powder
1 c flour
allspice (didn't measure - just poured it in!)

I forgot to look at how much cake mix it gave me but it was enough to make 2 - 4 inch round, 3 - 3 inch round and 4 - 2 inch round cakes (all are about 3 inches high). This was my first time making mini cakes so I don't know how it compares in volume to a regular cake mix but as I said I really like the flavour I ended up with! Can't wait to decorate them later this week!
