Freezing Buttercream Icing

I've read that several people freeze their buttercream icing. I was wondering, what type of container or wrapping do you put it in to keep it well? Also, how long will it keep. And.....how to go about defrosting it?

Thanks so much!! I have a few cakes coming up that I'd like to get some kind of headstart!!

Oh yeah...and does freezing it change the texture of flavor at all?

I had a quart of leftover cream cheese icing and was wondering if it could be frozen also? Anyone know?

I just put my icing in a tupperware container and then in the freezer. I have left some as long as 3 months and when I used it it tasted just like it did when I put it in. It did thin out a little was the only thing I noticed that changed and I assume it was from where it thawed out and got a little extra moisture. I just left my on the counter until it thawed. It didn't really take that long.

I have frozen it before and used it later (I'm not sure of the timeframe though) I just put it in an airtight container and I think your supposed to whip it up again before you use it... HTH icon_biggrin.gif

I have a bunch of little disposable ziploc/gladware type containers that I freeze my leftover icing in. I have had some for up to 2 monhths & they taste fine after thawing. I find it's nice to have some premade colors when you're pressed for time!

I do the same thing! I have a few bags of different colors in my freezer. They come in handy.

Wow! Thanks for all the great responses! I never even thought to put leftover colored icing int he freezer for those "in a pinch" time. What a great idea!!! icon_biggrin.gif
