Orange Juice Cake???????

My gramma just came home from the hospital and is wanting an orange juice cake. Does anyone have a recipe????? icon_rolleyes.gificon_rolleyes.gif

Although, you can substitute the water in a cake mix, with OJ and probably get the same thing!

If you want a recipe that's not a mix, you can try the ultra orange cake from the Joy of cooking. I use it all the time, and love it.

Ultra orange Cake

Recipe By :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 cups flour
1 cup sugar
1 teaspoon Baking soda
1/2 teaspoon salt
1 cup orange juice
1/3 cup vegetable oil
1 tablespoon orange zest
1 tablespoon vinegar
1 teaspoon vanilla

Mix together dry ingredients.

mix together wet ingredients

mix the two together.

bake at 350F for 30-35 min.

Yield:
"1 9 in round"

There is a recipe for Fresh orange cake in the Cake Doctor cookbook. I make in two layers with Orange Cream chees frosting. It is wonderful!! I think it has become our new family favorite.

I found a recipe (orange cream cheese) on Marthas web site. The picture of it on a carrot cake with candied carrot slices. It is a really NEAT looking cake, sounds wonderful too. I am def. going to make it. I'm not so sure I will like candied carrots, but they look really awesome on the cake, and what a great conversation pcs.
p.s. If not to much trouble I would love to have CB recipe for icing also, I'll see how they compare, and do the easiest icon_lol.gif

i made this cake awhile ago it turend out great!!!!!

INGREDIENTS:
1 (18.25 ounce) package yellow cake mix
1 (3 ounce) package instant lemon pudding mix
3/4 cup orange juice
1/2 cup vegetable oil
4 eggs
1 teaspoon lemon extract
1/3 cup orange juice
2/3 cup white sugar
1/4 cup butter

DIRECTIONS:
Grease a 10 inch Bundt pan. Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in 3/4 cup orange juice, oil, eggs and lemon extract. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
Bake in preheated oven for 50 to 60 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
In a saucepan over medium heat, cook 1/3 cup orange juice, sugar and butter for two minutes. Drizzle over cake.

I have substituted orange juice for the water in a yellow cake mix before and it came out really good. It was very easy!

Here is the one from The Cake MIx Doctor Cookbook.

FRESH ORANGE CAKE
1 pkg. yellow cake mix with pudding
1 cup fresh orange juice (from about 5 medium oanges) or the carton
1/2 cup vegetable oil
1/4 cup sugar
1 tsp. vanilla extract
4 large eggs

350 for 27 to 32 minutes for two 9 inch cake pans

FRESH ORANGE CREAM CHEESE FROSTING
8oz cream cheese at room temp
8 tbls butter at room temp
3 cups confectioners sugar, sifted
2 tbls fresh orange juice
1 tbls grated orange zest

mix butter and cream cheese, add sugar slowly on low, add juice and zest, increase mixer speed until the frosting lightens and is fluffy.
Use at once.

The book has this cake as a bundt with a glaze, but I like it a lot better in a 2 layer with the frsting.

This cake is sooo yummy!! I hope you like it.
