I had to freeze 2 14 inch cakes on Saturday due to a party cancellation for a snow storm. I plan to pull them out on Wednesday night and decorate on Thursday night...party rescheduled for Friday night. I have a couple of questions...

1. Do I leave them on the counter from Wed. night to Thursday night...will they be okay, and is that enough time to thaw them completely?

2. If I understand what I have read...do NOT unwrap to thaw, correct?

Any other advice that would be helpful.
Happy Valentine's Day by the way to all you fine bakers!

I DID MY OWN WEDDING CAKE AND PLANNING FOR MY WEDDING LAST YEAR. WHICH MEANS I HAD TO ALOT OF COOKING AHEAD OF TIME! I DID TAKE MY CAKES OUT THE FREEZER THE NIGHT BEFORE I DECORATED THEM. THEY WERE THAWED OUT. AS BEST I CAN REMEMBER...I DID LEAVE THEM COVERED. HOPE THIS HELPS!

BY THE WAY...THEY TASTED GREAT!

i sometimes decorate when frozen.. its almost easier... then you dont have to worry about unwrapping it .. they come out very moist if they thaw after decorated..

I take my cakes out the day before; let thraw still wrapped in foil. I unwrap the cakes after the condensation has disappeared from the foil.

I like placing my frozen cakes on cooling racks while thrawing out.
