Mousse's Fridge Life

Hey all

I made some chocolate mousse yesterday (ingredients: heavy cream, corn syrup, chocolate). I have about a half recipe left over--and I will be making a cake on Friday that also needs chocolate mousse. Do you think the mousse will last that long? It will be devoured at a party on Saturday.

So--is Monday-Saturday too long for mousse to live?

I would just like to save myself the time and costs...but not at the risk of endangering other peoples' health!

Make fresh closer to Saturday.

I use to work in a bakery and we would freeze our mousse.

I have kept it the fridge for a week . Just make sure you cover it really tight to try to avoid getting the other smells from the fridge.

I too only use it within 24 hours, not for the fact that it could make people sick but because it starts to separate. I would just make it fresh on the day ahead of when the cake is due.
