Does anyone have a recipe for strawberry buttercream? Can I just add strawberries (mashed) to my crusting buttercream recipe?

Thanks,
Julie

This is Martha Stewart's Strawberry Meringue Buttercream from her "Baking Handbook".

4 egg whites
1 1/4 c. sugar
3 sticks unsalted butter, cut into tablespoons, at room temperature
1 tsp vanilla
1 1/2 c. strawberry jam, pureed in a food processor

Heat the egg whites and the sugar in the top of a double boiler, whisking constantly until they reach 160F on a candy thermometer. Beat with the whisk attachment on high until stiff peaks form, 5-6 minutes, and mixture has cooled. Switch to paddle attachment and with mixer on medium-low, add the butter a few tablesppons at a time, beating well after each addition. (If the icing seems to separate, continue beating on medium-high for 3-5 minuites or until smooth again.) Beat in vanilla. Beat on lowest speed to eliminate any air bubbles, about 2 minutes. Fold in jam with a rubber spatula.

Real fruit will be too runny I'd suggest to mix some jam in with your usual white buttercream.

I mixed strawberry jam with my crusting buttercream for a filling and it worked really well. Everyone loved it.

Here is the strawberry buttercream frosting I use:

3/4c fresh strawberries rinsed and drained
1stick unsalted butter
4c powdered sugar
milk, if needed

Blend butter until fluffy and rest of ingredients. If frosting is too thin add more sugar--if too thick add more strawberries!!

Are the strawberries measured after being sliced?
