Help!!!! Icing Question!

OK guys I yet again need your help. I am doing a cake this weekend and it's for a party that will be outdoors and in Cali, it's been hot lately. I found this recipe below for diabetic icing and I want to try it, but becuz it has butter and cream cheese and what not in it... can it sit out or should it be refrigerated? I am decorating the cake the morning of so I probably won't be able to refrigerate it but I am more worried about it sitting out, especially being outside where it might be warm. What do you think???


Serves/Yields:
Prep. Time: 30
Cook Time: 0
Category: Diabetic Cakes, Frostings
Difficulty: Easy


This icing will cover and decorate an 8-inch 2-layer round cake.`

1 pint Whipping Cream
1 box Sugar Free Pudding
16 ounces Cream Cheese
3 TBSP Splenda

Whip Whipping Cream in cold bowl until stiff (chill paddle too).

Add softened cream cheese, pudding mix and Splenda. Mix on medium speed until well blended.

Can be colored and piped.

I would recommend refrigerating it for most of the day. What time is the party and when are they serving the cake? If it's for supper, maybe tell them to refrigerate it until the meal and then take it out for display during the meal and serve it after?

I am a little leary about anything whip cream and hot weather. But then, I am under five feet of snow at the moment. heehee

yeah, that's what i was thinking... i might do it for my bf's valentine's cake but i think i will do my normal b/c for this one since then i don't have to worry about it as much. thanx! icon_biggrin.gif

You are better off with buttercream, any whipped cream icing where the majority of the topping is whipped cream, as in this case, must be kept refrigerated up to and shortly after serving time.
