Yes, Red Velvet is one that people order not so much for the taste, but for the legend- but always seem to like the box mix once they have tried it. This is one of those flavors that I stock up on when I find it in the stores!
I also stock up on the cinnamon swirl mix. One I still have not found in the stores is the Orange. But I keep looking!

Red velvet is not a cake in my normal repertoire but I had an order for one for Valentines, so I bought one of the DH mixes. I was so turned off by the red dye... it was everywhere, yuck. the dust alighted on things and left red dye in its wake. All my utensils, pans, dish water, dish towels, and my fingers were red. Trying to do the crumb coat was awful, the dye wanted to bleed through. Normal cakes just have crumbs, this sucker had crumbs that left red dye in their wake. I will no longer make a DH red velvet cake for anyone. I may experiment with some of the traditional type red velvet recipe that uses beets for color but it will be awhile before I venture into the red zone again.

I don't eat the stuff either icon_razz.gif but I had to take a little taste to sample before I sent out this huge wedding cake order I had. It was nothing special as far as I'm concerned. I know this customer wanted it for the dramatic contrast, bright white icing/dark red cake. I think it's the look of it that makes it special.

I can buy this at a couple of places around here. Walmart is one of them .I noticed in the south that they carrt more variety than up here. In Texas. I have seen it here at a store across in WI.

As far as the staining of the red I have had no problem. The dust would only get everywhere if I turned my mixer on high! Love the stuff!

If you let it sit for a day or so it will crumb less!

I use the DH red velvet mix with buttermilk instead of water, and extra egg, 1 box of instant white chocolate pudding, and 2 TBSP of Hershey's cocoa powder added--it is basically a red colored milk chocolate cake mix to start. It's delicious and I haven't had "red" troubles, either.

I bought DH Red Velvet for the first time also. Everyone talks about it, so I wanted to try it. Disappointed though... the party that received the cake stated it crumbled apart as they cut it. I never had this problem with other DH mixes.

I agree, made per the box instructions I don't like the texture of the cake. See my post above for my solution.

Now this is piqued my interest. I have one lone box of the stuff (DH) sitting with the rest of my mixes just WAITING to be made. I have never had red velvet but it was 88 cents so I decided to try it. Guess that will be my cake project for this week! icon_smile.gif

The last person writing the urban legend story must be smoking some wacky tabacky. It saws it has a chocolate flavor. It so does not. I either make it wrong or I smoke the pot. I don't smoke pot so she must be wrong.

Yes, you can find DH red velvet in Texas! I see it in every store...I like it myself. On Valentines day, I had orders for 12 cakes and 7 of them was for red velvet, 2 for strawberry and 3 for white.

http://www.texascooking.com/features/may99redvelvet.htm

A quote from the above website:

"Actually, Red Velvet Cake is a beautifully textured cake with a mild chocolate flavor that just happens to be startlingly red. In order to mask its color before the cake is cut and enhance its redness once it is, Red Velvet Cake is traditionally complemented with a thick, very white frosting."

http://bakingsheet.blogspot.com/2007/02/red-velvet-cake-sandwich-cookies.html

"Red velvet cake is one of my favorite types of cake. It is a buttermilk cake with a hint of cocoa - just enough for flavor, not enough to make it "chocolate cake" - that has a gorgeous red hue."

Wikipedia: Red Velvet Cake
A Red velvet cake is a type of rich and sweet chocolate cake (though it is often made without chocolate flavoring) which has a distinctive dark red or red-brown color. Common ingredients include buttermilk, butter, flour, cocoa powder, and often either beets, or red food coloring. It is most popular in the American South, though known in other regions. The most typical frosting for a red velvet cake is cream cheese icing.

"The layer cake, filled and frosted with creamy white icing, is basically a devils food cake a moist light cocoa cake whose batter is doused with a bottle or two of food coloring to give that signature red hue"

I personally cannot stand the stuff, it's nasty, but I have a lot of customers want it, especially for wedding cakes. I haven't had too much problem with the red staining anything, but I do find some occasional batter splatters on things.

My walmart carries it all the time, and we also have the orange supreme that someone mentioned.

Personally, Red Velvet cake is nothing special to me either, but possibly I'm not making it right! I've never tried the mix, but RV cake is nothing short of legend here in the south! It "should" have a touch of chocolate flavor, since it has cocoa powder in it, but mine never tastes like much of anything.

I have never had a problem with a mess. I make my red velvet to make my cake balls. They turn out great.
Being Canadian Red Velvet is not a cake I knew anything about until I moved to the US. I use it for its artificially enhanced colour.
As for the lady who cannot find the orange DH in the OH area try going to a Biggs if you have one around. That is where I get my orange flavoured cake.
I am in N. KY and we have the same chains as So. OH.
Good Luck

i thought everyone knew red velvet was a chocolate cake with red dye in it.

one of the bakeries i worked at....it was barely red at all... it was hard to tell the difference between it and the german chocolate.

sometimes if i get an order and don't have time to go to the store i'll just take some of my chocolate batter and dump some red food coloring in it.

that griswalds place in new york in SO HIGH on thier shipping!
i ordered something from them once and the shipping alone was 18.00....i left a negative feedback and they credited it back on my credit card.

Red velvet cake is two of my daughters favorite cake. It was one of the flavors my youngest daughter chose for her wedding cake. I had no problems with the DH red velvet coloring anything. Now a couple months ago I tried an old recipe I found from a friend and that turned everything red. We usually use cream cheese icing on our

You haven't tasted a REAL Red Velvet cake unless it's made from scratch-Grandma's recipe. I am a box user, but box Red Velvet's DO NOT taste like the real thing AT ALL. It's one of the few that just has to be made from scratch. Just my two cents.

I agree it does have a hint of choc. Now as far as from scratch I would rather use the box. the recipe I had called for two small bottles of red and it was nothing like the box. HMMMM I love a could cream cheese not too sweet with it!! And yes cakes balls are a plus!!

It was a choc cake recipe with red dye!

Hmmm...I never knew anything about the "Red Velvet" legend, or that it was hard to get. I live in Maine and you can find it in any grocery store or supercenter (and actually I've seen it in regular WalMarts too). I could make a mint selling these online! icon_razz.gif

As for the chocolate taste, couldn't you just add a box of chocolate pudding to it? I bet that would really help, and would remain red.

Oh my gosh you guys who don't eat don't know what is good LOL. Red Velvet cake with cream cheese icing is the cats meow LOL. I don't believe I know of anyone around who don't like red velvet cake. I don't believe I have tried to make it homemade though, I would love to try it if anyone has a good recipe they would like to share.

My former mother in law makes an amazing Red Velvet cake from scratch...was and is my ex-husband's favorite! I tried her recipe once, and failed miserably...not why he divorced me though! icon_smile.gif I used the Cake DRS. recipe once, and it was pretty good...started with a devils food cake mix. I have the DH's version and anxious to try it and see how it turns out. Might have my mother in law be the taste tester and see if she can tell a difference. LOL! But in regards to it being a chocolate cake...yes, her recipe had cocoa in it...has to be considered chocolate based with red dye! She uses a totally different icing...real creamy, but not BC or cream cheese! Funny how everyone has different opinions...guess that's what makes the world go round!

I have never tried the mix, but have made many from scratch for an order a couple of years ago. It is a little messy dealing with a few ounces of red dye.

But for the most part it is a light chocolate flavored cake that is red.

I was able to find a red dye that had no flavor not sure where or how, just got lucky. So the taste was good. Used a cream cheese frosting on it. They were a hit.

red velvet cake made from scratch turns reddish because of the chemical reaction that putting the batter into the heat creates ...

it's the right mix of chemicals and ingredients that make it reddish...

people think it should be BLOOD RED...but..I KNOW that anycake that is too red...it's because the RED DYE has been added.

My family loves red velvet cake. I made my cousin one this weekend for her birthday. It is a mild chocolate cake with red coloring added. I normally make this cake from scratch but I have used the mix once or twice in a rush. The mix is pretty good if you doctor it a little. I use buttermilk instead of water and add a little sour cream. I ice red velvet with a fluffy white icing that does not use cream cheese.

I also make a red velvet cheesecake.

I actually used the "doctored" Red Velvet mix from a fellow CC'er (don't remember who. Now I have tried tons of scratch recipes, including Sarah's, and I'm here to tell you the "doctored" version beats all of these hands down. And then, if you top it with Toba garrett's cream cheese buttercream. you'll think you've died and gone to heaven. here's the doctored recipe I use:

1 box Duncan Hines Red Velvet Cake Mix
4 eggs
1 C sour cream
1/2 C oil
1 small box Jello instant chocolate pudding
1 small bottle ( 1 oz) liquid red food coloring

This is the absolute best and it is super chocolatey. Everytime I make this my family/friends/clients go crazy!
