Freezing Decorated Cakes

I will be traveling from FL to LA for an 80th surprise birthday party. Since this is a surprise party I will not have access to a kitchen for creating the cake and will be decorating from my hotel room icon_eek.gif . Is it possible to bake, layer, cover the cake layers in MMF and freeze them until I leave. That way all I have to do is assemble to tiers and add decorations. Please help!

Yes it is possible.

Some people have luck with decorating the whole cake and freezing it, (me included), but not everyone does. I'd imagine even in February, there might be humidty in LA (Louisiana?), so decorating in the hotel room might be ok. Might want to thnk about cranking the air conditioning on though, just to be safe.

I'm not sure how the MMF will hold up to freezing. I think it might melt during the thawing process.

I recently brought a cake from NY to FL with no problems. I baked, iced and covered in MMF night before I left and I assembled and added finishing touches while I was there. It was the two tier stacked baby shower cake in my photos. I found this square, plastic ornament box at target that had two snap together levels and a carrying handle. One cake tier fit on each level. I used nonskid mats under each and duct taped the decorating bags, tips, etc to the inside of the box. This was my carryon bag. (Then the baggage handlers broke it on my way home.) icon_mad.gif

Not sure if my buddy Cakeman66 noticed you mentioned covering it with Marshmallow fondant and freezing, I suspect he missed that part. I don't find freezing any cake that is covered in fondant works well, the fondant goes slimey once it is on a cake and frozen and defrosted. I find marshmallow fondant even worse than regular rolled fondant, likely because people tend to cover it much more thinly. I would go with buttercream if I was going to freeze an iced cake or cover it once there.

I was totally thinking straight buttercream.

As the late great Gilda Radner used to say... Neverrrrminnnnnd.



Is it break time yet? I could use a nice shot of Tequila or something, maybe it'll make me read closer.

Heehee, funniest post of the day! What, we are allowed Tequilla on breaks? Nobody told me that, haha!
Frozen Margaritas? Hhmn, that is one thing that doesn't go slimey when frozen....No time to defrost!

You could make your MMF ahead and take it with you to put on the cake. Cover the cake in BC before you freeze and then just add the MMF in the hotel.

Good luck I have never decorated in a hotel room I hope it goes well!
