Coconut Cake Incing Question???

Hi all, I need some ideas for what sort of icing I can use for a coconut cake that I'm doing tomorrow. I've been using the Fluffy Boiled Icing that's in the Wilton books and I like the taste, but I've noticed that when I put the coconut on, the icing wants to slide, sliding is not good....
At first I thought well I won't put the coconut on too heavy but I don't think that helped any, I think the icing needs to be a little stiffer. So, anyone have any icing receipes they like to use for a coconut cake?

Need to bump this one up. I would like a recipe for this too. I've never found an icing that's good for coconut cake and buttercream is just too sweet for it in my opinion. Help anyone??

I am going to try one tomorrow with Whipped cream icing and just to dress it up.. I seen a cake here that inspired me to add some chocolate to the top and have it dripping down the sides.. Wish me luck! Oh yea I am also thinking about adding a little coconut to the sides, not sure yet though.. I'll post pick tomorrow..

The baker at a restaurant I used to work at liked to use a barely sweetened whipped topping, and then, pat coconut on the sides.

It usually worked quite well.

The coconut cakes I make are very simple. Take a small container of cool whip and mix in about 1/3 of a can of Coco Lopez - use that as a fiilling and for the icing, then top with shredded coconut (either toasted or plain)

the cake itself I make a plain white cake mix (oops, add about 1 cup of coconut to the batter!) and when it comes out of the oven I poke holes in it and pour 2/3 of the can of Coco Lopez over top. It is delicious! (and SO simple)

I use a 16oz container of sour cream,2 cups sugar and 2 6 oz bags of frozen coconut...mix and let stand in refrig. while cake is baking and cooling. Split your layers and put this mixture between layers reserving 1 cup with which you add 2 cups of cool whip(sometimes I add a little more Cool Whip and a little less sour cream mixture so that I have plenty and it won't be runny) for the icing and then put your flaked coconut on. I get tons of request for my coconut cakes...Hope this helps.

Here is my coconut cake.. I used a whipped topping icing and the coconut stayed on the sides perfect.. the coconut never tried to run off the sides!

p.s. here is what I used..

Two 16oz. cool whipped topping (any kind)
1/3 cup of powdered sugar
1 and half of tablespoons of meringue powder
1 tablespoon of clear vanilla if you don't have clear that is fine, just don't use more than 1 Tbls. It will turn your whipped icing a little off white..

DO NOT whip if the cool whip is a little frozen. Make sure it does not have frozen spots..

add your powdered sugar, meringue first, vanilla and then add your cool whip on top of that.. (keeps your powders from going everywhere)
Start whipping it for on low for about 2-3 mins. Enough to mix it all. Then hit the highest speed you have, I really "eye ball it". When I see that it is making swirly lines then it is becoming thick.. Check on it every few mins. haha "finger test it" meaning stick your finger in it, you can tell by the way it feels when it is at the right stage.. It should just feel thick.. when your done, keep it in the fridge when not useing it.. it's tricky getting this smooth.. My only method I have found is using a a spatula dipped in HOT water and shake off excess water then go over it gently. Hope you enjoy this! let me know if you need any help! This usually covers my 11X15 cake.. Not filled.. and I use this for borders too.. Just have to work with it fast, it will melt in your hands.. Good luck!
