i had an order, at the last minute, for a diabetic cake. I used a recipe from here for the cake and the icing. the cake didnt rise, and its dry, tastes yucky, and the icing isnt much better. I have to deliver in the morning!! do sugarfree cakes just taste different? Should I bring money with me to give her a refund? I charged her $20 for a 6 inch smash cake, and a 8 inch round sugarfree cake.

I dont like them but I think people get used to no sugar rather quickly when they can't have any. I'll give you a bump on the money question icon_smile.gif
Good luck and I bet they will like it!!

I made one too on Thursday. I didn't get to taste it and I'm almost afraid to ask. It had bananas and dates in it topped with walnuts. Looked and felt more like bread to me!

I've made a few sugar-free cakes, and I have to agree, they do taste a lot different, and the texture was not what I'm used to.
However, the clients loved them. Go figure.
No, don't offer a refund. Just follow up with them and ask how the cakes were (I would have charged another 5 or 6 dollars, btw). You may be pleasantly suprised. But, no don't offer a refund...you are giving them what they ordered.

my sugar free cakes dont rise too much and they taste different. my diabetic customers love them, though. also, i charge at least $15 FOR A 6" SUGAR FREE ROUND. remember, cakes are novelties... and sugar free cakes are specialty. icon_smile.gif

Don't forget too... that if someone is used to eating sugar free stuff all the time, they will probably think the cake tastes just fine. They have the taste for it.

I have a friend who is diabetic, and I bake her things from time to time..... and honestly, I think the stuff I make her is ok.... but not great (taste wise). She, on the other hand, is always raving about my cakes.

I think you can play around with different things to get the texture not as dry... but the taste will always be different because of the lack of sugar.

I made one for my mom's birthday. A recipe from cc. Torted and Raspberry filling and whipped cream. All for diabetics. It was the most nastiest tasting thing we had ever tasted. The look on her face with that 1st bite was priceless. We threw it away. The only good thing about it, is that it did look beautiful!
