I am getting a cake ready to go out tomorrow morning at 9am. It is a 2 tier cake-an 8" stacked on top of a 12". Do you think that it is OK to dowel and stack today? I feel I am at a stand still...The customer is picking up the cake and taking it for about a 2 hour drive!

As long as there are several- perfectly level dowels, it should be fine.

I would also be sure the top tier is 'glued' to the bottom to avoid sliding.
It makes is a bit messy removing it for cutting, but it will help prevent it falling off during the trip.

Hi,
If it is traveling, I would also place a dowel down through the center of both cakes. Just in case of a quick stop or "speed bump" icon_lol.gif
