So I have been doing cakes for almost a year, have quite a little side thing going with people at work etc. My cakes are always well received and look nice, however I am at the point where I feel like I need to take it up a notch... (sorry I haven't posted a lot of cakes, I really need to get on that! icon_redface.gif )

The one thing that has haunted me are my corners on the sheet cakes or on square cakes. They tend to slope down to the sides. It is very annoying. I try to build up the frosting and then smooth again. My corners on the side are pretty clean, it is just the tops sloping down. Any ideas on how I can correct this?

Thanks in advance!

Melissa

Yes, I did look at the article, and that really helped me get the corners crisp, but I still have the sloping sides problem. When they get to the corners, It just seems to drop off. I guess I need help in how to get the top frosting level... any tips on that? Is it just something that comes with time, I ice the top first and then go to the sides, should I try going the opposite, and do the sides first and then the top?

Anyone else have this issue?

It sounds like you aren't trimming enough off to make it level. Take it down another notch and the problem will go away. After flipping the top over so the cut edges are together press gently in the middle of the cake in case there is a hill there.

Hope this helps
