Freezing Cakes

I am considering making Valentine Mini Cakes to sell at the school I work at. I would definitely need to make them in advance. Will someone share with me what is the BEST way to freeze a cake? I've read some replies that tell how long, but how and where should they be stored? Also, how long do they need to "sit out" to unthaw? I would hate to end up with a bunch of soggy cakes. icon_cry.gif

First, just be sure that you wrap them up really good before freezing. As for thawing, I just take mine out of the freezer and let it sit somewhere until it's back to room temperature. Do not unwrap until it is thawed completely. Your cakes shouldn't be soggy if you keep them wrapped while thawing because the condensation will accumulate outside of the wrap. Hope this helps.
