I am making a baby shower cake and want the cake to sit out overnight before icing. Can any of you experts tell me how I should store it over night? Should I cover it? If so, with what? I want to make sure it is completely cool. Also how long will a cake stay fresh before serving? Thank all for your advice!!

I glue my cake on to the board with a bit of icing and then put it inside a food safe bag and seal it up with a twist tie or packing tape.I put it in the refridgerater over night.Cold cake is much easier to work with anyway!! I only ever do this the night before decorating so I can't help with the freshness thing!

If I have to ice the cake the next day, I place the cake inside a plastic container and than in the fridge. I don't wrap it with plastic or place it in a bag, just in the container. If I am to freeze it for a while, than I wrap it in foil and place it in plastic bag.

If I bake a cake and don't have time ice it that night, I just wrap it in syran wrap or foil. You just want to make sure it is covered well and won't get dried out.
