I have double orders this weekend. How far in advance have you all baked and decorated a cake and have still be fresh?

Welcome to CC.

You can freeze a cake up to six months.

I have orders this weekend and made my cakes and froze them two weeks ago. I always freeze my cakes because the condensation help to make them even moistier when thrawing out.

Yes I am AlamoSweets in San Antonio. icon_smile.gif Thanks for the compliments. I am just getting started and still working at a full time job also so I do freeze my cakes and you are right - it does make them more moist. I have to pull an overnighter because I don't start decorating them until the night before. How much in advance have you decorated your cakes?

I freeze my cakes in advance sometimes if my schedule requires it. I've never had one frozen for more than 2 weeks, though. Usually, before they go in the freezer I brush a simple syrup or apricot glaze over them and then wrap and freeze. As far as decorating ahead....I've only done it 2 days in advance before.
