I am having a dessert party. I have a cake planned and punch and coffee. Any other Ideas. There will be about forty people there. I was thinling a cheese tray as well and apples with camrel dip. Any other Ideas, I can't seem to think of anything else. I am on a limited budget. icon_cool.gif

how about some candied or spiced nuts?

Or maybe some small bite size sweets, like petit fours or candies? Or cake balls made with your extra cake crumbs from leveling your cake?

I had planned on doing nuts, too. I just can't seem to come up with anything else. I tried going to Grocery store in my area and seeing if there bakeries made any special littel goodies and all there is is cakes. I don't want to be to repative.

How about mini cream puffs? If you don't want to make them you can usually buy them in the frozen food section?
Or chocolate covered strawberries are always pretty.

I just watched Top 5 on the Food Network this morning. The episode was about the top 5 petite sweets. Number 1 on the list was gourmet cheesecake pops. They looked very simple to make, and also very fancy.

I know someone else already suggested mini cheesecakes, but this might put a new spin on the idea.

I was thinking these would be perfect for Valentine's day also. Dipped in white chocolate that's been tinted pink.

How about something good and chocolatey. I saw on the back of a chocolate fudge cake mix they had a recipe that included cherry pie filling in with the cake mix. It's cut into bars. It looked good! I can hunt the recipe if you want.

Heres a link to the recipe on this site.

However you can pretty much make up the recipe as you go. You basically need cake crumbs of any kind and some sort of liquid to stick it together, whether it be liquor, coffee creamer or extract. Mix the cake crumbs up, add enough liquid to make it stick and add any other ingredients you like, I made some with chocolate ganache added, mmmm it was really good. Roll the mixture into balls and freeze. Then melt chocolate or candy melts and dip the frozen balls, let set and you can decorate them any way you like, rolled in powdered sugar or cocoa or add some simple royal icing hearts maybe for Valentines day.

You could make cheesecake bites:
Make a cheesecake in a 9x13 pan lined (overlapping the sides) with parchment. Allow to cool. Pull the cake out of the pan slightly to completely loosen. Refrigerate overnight. Pull again to make sure it is completely loosened. Freeze next day. After frozen, remove from pan, slice in bite size pieces. Coat in melted chocolate. Allow to set. Freeze. Serve slightly frozen.

Any type of cheesecake work, and any flavor of choclate works. They taste great. You can decorate like petit fours.

I was also thinking about Brownies, I how ever cannot make a good batch of brownies. I can bake just about anything else. They always stick to the pan. Or the don't taste good. Does anyone ahve good brownie recipes?

The recipe on the ghiridelli sweetened cocoa is delicious. I just add a bag of mini chocolate chips to it and have had many people tell me they are the best they have ever had.

Some I use for catering are: cranberry glazed meatballs, fruit kabobs w/fruit dip, spinich dip w/scooped out bread, canapes.

Oooooh...this isnt a dessert but its good. A friend made it as an appetizer at Christmas.

Its a cranberry salsa dumped over two sticks of cream cheese.

You dump a can of jellied cranberries in a bowl and and some ginger, half a can or so of green chiles, some chopped green onion... and I think thats it. Pour it over the cream cheese and scoop up with tricuits.

It sounds weird, but trust me it is good!

***I just got home from school so I'm salivating at the thought of glazed meatballs!

Any suggestions on what to put into a fruit kabob? I have limited resources for really good fruit. Also does anyone have a recipe for friut dip? I would like it to seem gourmet without the gourmet price!

marshmallow cream blended with softened cream cheese makes a really yummy fruit dip and its super easy. One jar of marshmallow cream to 8oz bars of cream cheese. Put in a mixer and mix until smooth
