I was wondering if anyone can give me pointers on making those milk chocolate and white chocolate covered strawberries that look like little tuxedos?

They weren't that difficult when I made them.

Just have a bowl of white chocolate, and a bowl of regular.

Dip straight up and down in the white, and let it solidify. The dip one side, the other side, and the back in chocolate and let THAT dry.

And then I just took a tooth pick and dipped it in the chocolate for ties and buttons. Alternatively you could use a parchment pasty bag with a tiny opening to draw the ties and buttons on. (I didn't have pasty bags, or the ability to make them at the time.)

One thing is to be sure you let the excess drip off or you'll end up with a big puddle of chocolate collected around the bottom of the strawberry.

I dip my strawberries at an angle in the dark/milk chocolate to make a "V" for the tuxedo. Give your strawberries a little push on the tray after you set them down each time you dip them. This prevents that lip from forming. Another tip I use about a tablespoon of paramount crystals in my chocolate when I melt them. This helps the chocolate stay on the strawberries after you take a bite.

Cakemommy, this is probably the most idiotic question, but what are paramount crystals?

Thank you!!! I was waiting for you to say it was a brand of granulated sugar!

I'll try it--as much as I LOVE chocolate dipped strawberries, it isn't so wonderful when the chocolate shell comes off in the first bite! Neat!

These are fun to make! I have a cake w/them on my photos. I dip just the front for the white then it doesn't get so thick. They are soooo good! I love the picture of the white wedding dress one! How cute and soooo perfect!
