I have two customers who want very decadent(sp?) chocolate cakes for valentines day. Any ideas? I generally use Dunkin Hines chocolate fudge but they want fillings and things that are not just chocolate. They have given me specifics on decoration so I am ok there just need actual cake recipes or flavor combos that are tried and true! Thanks

This is a frequent request from my customers.
both mousse flavors are great my most requested is raspberry
The last time I made this cake, I cover it with Ganache. WOW it was so good.

Deep Dark Chocolate Cake preheat oven to 350*
2 cups sugar enough batter for 2 9" rounds
1 3/4 cups flour or 13x9
3/4 cup Cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup oil
2 tsps vanilla
1 cup boiling water

Grease & flour the pans. Combine sugar, flour, cocoa, b powder, baking soda and salt. Mix well. Add eggs, milk, oil, and vanilla; beat on medium speed 2 minutes. Remove from mixer; stir in boiling water (batter will be thin). Pour into prepared pans. Bake 30 to 35 min for round pans, 35 to 40 minutes for 9x13, or until wooden pick inserted in center comes out clean.

White chocolate mousse
6 oz white chocolate chips (melted)- cooled slightly
4 to 5 TBSP Low or no-sugar preserves (I use Raspberry or strawberry)
Smuckers makes some
3/4 container of an 8 oz Non-dairy whipped topping.

mix all together and use a filling.

My customers love my chocolate-hazelnut frosting as a filling.....I just add Nestle's pre-melted chocolate to my regular buttercream, a couple drops of Frangelico and/or Lor-Ann's chocolate hazelnut, and finely chopped hazelnuts (also known as filberts.), and mini chocolate chips.

Sometimes a little cooled espresso in the icing works too......a little as a replacement for some of the water in the cake batter is nice as well!

If you can get your hands on Hershey's Dutch Processed Special Dark Cocoa, GRAB it. I recently made a cake with that using their recipe on the back of the can. It was the best dark chocolate icing I have ever made. I (& others) thought it was very decadent. I bet you can make some really good ganache with that too. You could fill the cake with the buttercream and frost it with the ganache or vice versa. There is a recipe for special dark cake on the box but I haven't tried that yet. I used a DH Chocolate fudge with mine and milk chocolate buttercream for filling with the dark chocolate icing. It was really good. It's posted in my pics if you want to see how dark the icing was.

I have seen this in the store, but have yet to purchase it. My cash flow is really bad until I graduate in May. But I have been given a sum of money to build my cake decoration equipment and pantry supplies. This will definitely be added to my list of must haves.

gma1956, I know what you mean about a limited budge. It wasn't too bad, I think I paid around $2 for it. It was the same price as the regular cocoa. Hey, its cheaper than adding all that brown and black to my normal chocolate icing & tastes a lot better, LOL!!

About the ganache, I goofed!! I meant to say that I also picked up a bag of Hershey's special dark chocolate chips. I haven't tried them yet but am guessing they will make an awesome dark ganache.
