I had some leftover gingerbread dough from Christmas. I wrapped it up and popped it in the freezer, but it's been almost 4 weeks ago. Is it still ok to use? I was thinking of using it for some Valentine's cookies, but just wasn't sure if it would be ok. I know it'll be ok to practice with, but what about the taste?

sure...it's fine as long as it was wrapped well. I've used it up to 2 months old.

I'm glad to hear it's Ok to use, I've wondered about that too. Do you just thaw it in the fridge first and then cut and bake as normal?

I take it from the freezer and let it thaw on the counter for an hour or two, then I give it a bit of a knead with my hands to get the dough soft and roll it right onto my Silpats as usual. No flour.
