Hi my name is Michelle, I'm so glad to have found this website it's so great.
I have a question what is taught in the Wilton II class? I have been doing cakes for a couple of years and I don't want to take a class of things I already know. I checked out the Wilton site and it wasn't to discriptive as to what is taught.

From what I remember basketweaving, flowers w/ royal icing, and colorflow critters were what we covered.

In Course II you will learn several new borders as well as royal icing and color-flow techniques. Royal icing flowers include the mum, violet, violet leaves, apple blossom, pansy, daffodil, and the Victorian rose. You will also learn basketweaving and the complementary rope border.

You learn reverse shell border, rosettes, the rope border, basket weave, color flow, 9 new flowers (and a leaf) with royal icing.

Sorry, I had a baby right after course 2 started, so I missed most of it. I got that basketweave though! icon_biggrin.gif

I had been doing cakes for a while as well but found after taking all three classes that I was doing some things too quickly or not quite right. It was beneficial to me to take all three.

I have to agree with Barefoot Contessa. I even learned things I didn't know in Course I - and when they were working on the things I knew, I just helped the instructor with the students that were having a harder time. I loved taking all 3 classes, and I was not a novice at decorating. Just goes to show it's never too late to teach an old dog new tricks. icon_wink.gif
