Does everybody here use fondant because it is so pretty or because you like the taste of it? I have used fondant and made a pretty cake but as for the taste, it was stiff and bland. You can't beat buttercream for the flavor, I guess. When I serve a fondant cake, people scrape off the fondant and eat the frosting underneath and the cake. Does this happen to anyone else?

Try the marshmallow fondant recipe on this website. The wilton stuff is great for doing decorations that you want to harden, but you can't beat the mmf. My husband (the official cake tester) says that the mmf is way better. Personally, I use the fondant b/c it gives such a beautifully "clean" looking cake....and if you use mmf it's pretty good.

Satin Ice fondant is really good too. My problem is that it's not just the taste though, it's the texture!?

When I made the cake I posted, I made mmf fondant and flavored it with mint flavoring. It turned out great (well sort of, I didn't take into account the dry weather lately and it sorta cracked a little on me) but nevertheless, everyone loved it and the cake to boot. The best way to find what works for you is to experiment and play, play, and play some more!!! icon_biggrin.gif

I found a recipe for rolled buttercream fondant at allrecipes.com. I plan to try it next month. It sounds like it should taste pretty good.

I use Mill Lane fondant and I quite like it... the chocolate fondant is really yummy, the white is a little sweet for my taste, but still pretty good.

Note: lots of people here love MMF, but it is sweeter than regular fondant, and it's not that different to make either one.

Satin Ice tastes good.
Just served it to kids - they loved it. Many adults seem to already have formed an opinion on fondant and wont eat it no matter what you do. Like my fiance. Never ever touches it. Just east all the cake and BC inside, forming a neat little fondant shell left on his plate. LOL!

In Australia we use fondant a lot, but i've noticed that the flavour of our fondants are very different to the Wilton stuff. I bought a batch of it, and found it to be waxy and tasted pretty awful. I used to use Orchard brand which was pretty affordable. I have found out about fondX since then and i love it, It tastes much better, and it's moisture resistant. One problem with fondant is that you can't easily refrigerate it, if it's warm outside, when you take it out the stuff will start to sweat like crazy. Fondants in Australia do anyway. We were always told in class "never put fondant or gumpaste in the fridge", i mean decorated cakes with that stuff. But since my cakes have fresh cream and stuff the fridge cannot be avoided. I just suffered through the sweat. FondX has solved all these problems. It's made in California.
cheers
Nati

Nati,

No, just the Marshmallow Fondant.

I've heard of Fondx but haven't tried it...where can it be purchased?

FondX is made by CalJava. They can be reached on the web at: www.cakevisions.com or 800.207.2780. They also make Sweet Inspirations white chocolate fondant (the raspberry flavor is amazing). White chocolate fondant (like ChocoPan) is a little more expensive. It's also softer in texture. But they're delicious!!

If you try the white chocolate fondant and find it a little too soft, just refrigerate for a while. YOU CAN ONLY DO THIS WITH WHITE CHOCOLATE FONDANT!!

Also, remember fondant can be flavored with candy oils. So if the vanilla is too bland, add a flavor. I use raspberry, lemon, marshmallow, coconut, etc. depending on the cake flavor.

I LOVE using fondant!! It's a great artistic medium. I try to sneak fondant accents on cakes whenever I can so people will realize that the fondant of a few years ago, is not the fondant that we use today.

Brand favorites: FondX,Satin Ice for regular fondant. Sweet Inspiration for white chocolate fondant.

Recipe that I make: marshmallow fondant (FondX tastes like MMF). It's easy to make and very inexpensive. Check the ingredients on a bucket of ready made fondant. You'll find them similar to the ingredients of marshmallows and confectioners sugar. MMF is just fondant. You're just make smaller quantities than a manufacturer.

Happy New Year All!!!!

I just made that recipe! It really turned out well. I mixed by hand, and then kneeded in the sugar. I really only made it because I was curious at how it would turn out (I didn't have a cake for it to go on) but I rolled it out, and it picked up well and didn't crack. I almost think it is better than regular rolled fondant. I made a few flowers out of it, too, and they turned out great! It tastes so good, too! On a cake with buttercream underneath...yummy! thumbs_up.gif
