I just got asked to do a baby cake. The mom is diabetic. Any good cake recipes, icing recipes and filling recipes that are really good and people who aren't diabetic will enjoy too? Help is appreciated.

There is a really good diabetic icing recipe with cream cheese in it. VERY tasty! I think the best bet for filling is a fruit filling. There is a pineapple filling recipe I got off this site and you could also use the simply fruit preserves.

Sorry, I forgot to add that you can also use 2 c. heavy whipping cream whipped with a box of sugar free pudding. You could do that as a filling too. I piped it on top of cupcakes before, I don't think it would stand up to decorating a cake though.

I have bought sugar free cake mixes and icings from Kroger in the diet food section. The taste was really good. I know they have chocolate and white flavors. This might be an easy option if you do not want to make it from scratch.
