I just got asked to do a baby cake. The mom is diabetic. Any good cake recipes, icing recipes and filling recipes that are really good and people who aren't diabetic will enjoy too? Help is appreciated.

Have you searched the recipes here?? There are some yummy diabetic recipes in the recipe section...

There is a really good diabetic icing recipe with cream cheese in it. VERY tasty! I think the best bet for filling is a fruit filling. There is a pineapple filling recipe I got off this site and you could also use the simply fruit preserves.

Sorry, I forgot to add that you can also use 2 c. heavy whipping cream whipped with a box of sugar free pudding. You could do that as a filling too. I piped it on top of cupcakes before, I don't think it would stand up to decorating a cake though.

thanks. I saw the icing on here and the pineapple cake. I've never made either one of them so I didn't know how they were taste wise.

I have bought sugar free cake mixes and icings from Kroger in the diet food section. The taste was really good. I know they have chocolate and white flavors. This might be an easy option if you do not want to make it from scratch. icon_smile.gif
