Help!! Gingerbread Dough Softening!?

Is it okay to put gingerbread dough in the freezer to chill? That's what I had to do to save some time, but when I start rolling it out it starts getting really soft and sticking to the parchment paper I'm rolling it out on. I'm rolling it between two pieces of parchment...dusted with flour a little bit, which helped while I rolled. But then, when I started cutting them out and transferring to a cookie sheet, they started going soft again...and really quickly. I hope someone can tell me what I'm doing wrong!! icon_redface.gif I need to have these for in the morning!! icon_surprised.gif

I haven't made gingerbread dough before, but I know you can bake on parchment paper, so why not just slip that on to your cookie sheet and bake it , rather than trying to move it.

roll out your dough and use the cutter to cut your cookie shapes, then slip the whole piece of dough onto a baking tray and put it in your freezer for 10 minutes.

Remove from freezer and slip your hand under the dough and "pop" out the shapes onto a new baking tray. They don't warp or soften that way.

Put the tray of cold cookies right into the oven.

I thought about that too...but it was softening so much and so fast that I couldn't even get the scraps separated from the cut outs without it getting all messed up!! lol I might give that method another try, though, when the dough is a little firmer...in about 30 minutes. Gonna be an all-nighter, I think... icon_rolleyes.gif

Antonia - thanks so much for cluing me in on putting them back in the freezer for a few minutes after they're cut out! That did the trick thumbs_up.gif So, in an hour and a half, I was able to do almost 4 dozen...not too bad when you have a finicky oven like I do...lol. I had 3 sheets going, so I was able to constantly work...one in the oven-one in the freezer with cookies on it-another at the table ready for me to slip the next batch on. But I still have about another 2 doz. to go! And I have to decorate...OMG!!!!! lol icon_surprised.gificon_rolleyes.gif I had to take a break for a minute and get off my feet. Next I'll make my royal and color batches. Good thing I'm only doing squiggles on the arms and legs, dots for eyes and buttons and a mouth...lol. Otherwise, these gingerbread kids would be abandoned!!! lol icon_lol.gificon_razz.gif

JennT... Just for future reference I would check your recipe for the gingerbread. It should not be that soft. I'm sure that maybe it just needed to cool longer than you had time for. I have a good recipe for gingerbread if you ever need it. It's the recipe I used to make my Gingerbread House icon_smile.gif

Well...I'm DONE!! Slept for a little while, then got back up & back to it...lol. I realized that I would've Antonia's solution to my problem, if I had only read the tutorial she did...instead of scanning it quickly because I was in a hurry! icon_redface.gificon_razz.gif But it all worked out in the end. First time I've ever decorated a cookie, so I've got a lot to learn. But, I've even got them packaged up individually. Man will I sleep like a baby tonight!!

I figured out a couple of things that may have attributed to the softening of the dough as I worked with it. 1-It probably did need to chill longer than I had time for, as susanrcp pointed out. Though it had been chilling for almost 3 hrs....See what happens when you get in a hurry??!! lol icon_razz.gif 2-I realized our heater had been running since about 8 pm...it hadn't shut off at all or cycled like it's supposed to!!! I got a little warm and went to the thermostat...it was only set at 62 degrees...and it wasn't but maybe 40 degrees last night, so it should've gone off & come on again periodically...but the heater just kept going. I eventually had to shut it off at the breaker for it to stop!!! lol But once it was off it helped out the dough a ton! lol

Here's a picture of them on the rack...I sprinkled sugar sparkles (? or something like that...zzzzz) on them after decorating. And a picture of them all packaged for Christmas presents for my sons kindergarten classmates. I figured with all the junk & sugar they get thrown at them that just one would be enough...since they're big cookies...and their Mom's would appreciate it too! Sorry for rambling...I'm tired AND I have a caffeine buzz at the same time....go figure. icon_rolleyes.gif

I'm sorry I didn't suggest cutting them out on parchment paper when I gave you my recipe yesterday! icon_redface.gif After I rolled them in between the two pieces of parchment paper, I lifted the top one off and cut all the shapes while the dough was still sitting on the bottom piece of parchment. Then I just removed the scraps and left the cookies in place. After that you just lift the parchment with the cookies on it and put that on your cookie sheet and bake them. I know you're done with these already, but it works great if you ever feel like making them again, which I'm sure you won't for a while!
