My DH has decided that it would MAKE his Christmas if I made a yule log for him. I have never done this before, do I have to use a special cake type or will will a mix be okay, do I have to make it a sponge cake? Help or tips would be greatly appreciated!

Thanks in advance!

Melissa

a buche de Noel, eh?

here's a link to the one they made on Sara's Secrets (Food TV).

there's also a gameplan link at then end of the recipe w/ advice to make the process go easier.

basically, it's just a sponge cake, iced, rolled and then decorated.
the big debate seems to be marzipan or fondant for the mushrooms.

Making meringue mushrooms is pretty easy to do for them too. they almost look real! Good luck - they are not too difficult to do, and they are very pretty!
