Ok I did a ton of these last week and tried to do again tonight. I can usually dip no problem but tonight its coming out ugly. I am using Merckins white. the bottoms are not covering and its see through but if I recoat then its too thick. I have 12 dozen to do for thursday and getting frustrated.

Hi,

I normally poke a toothpick in the center of them, freeze them and then dip them into the chocolate. After removing the toothpick, I drip a bit of chocolate from a spoon to cover the hole.

Just redip the bottom. It happens with all choc but seems more evident with the white b/c its white. I really wouldn't worry about the bottoms b/c they will be quickly eaten and the bottoms never seen!

..I do the toothpick trick too! I wouldn't worry about the bottoms either. No one sees that part anyway! Plus, if there is too much chocolate , it tends to "puddle" around the bottom!
