Just 12 days to go... for my big wedding cake order... five stacked rich fruit cakes.

I baked the cakes last week, the largest one (13" in diameter) took three and a half hours to bake. So, although I put the first cake in the oven at 10 am, I was still baking 14 hours later at 12 am!

5 round cakes and 2 sheet cakes...all done. (and spiked with rum once already... twice more to go)

This is a long distance cake, I live on the South-East Coast of India (Chennai) and the wedding is on the West Coast(Mumbai).

So I will be carrying my cakes and two large boxes of equipment with me on the flight on Saturday. I just hope they survive the airport man-handling. There is no way I can carry them as hand luggage as they are much too heavy.

Marzipan and fondant to make and cover the cake, 300 roses and acanthus leaves of gum-paste, and two sugar vases(extra in case of breakage) to do in one week... I think I might be in some time trouble. Luckily my Mom will babysit, all ten days!

Thanks for all the help, when I was planning this cake re: cutting guides, knives, serving, stacking, cake-stands. You are the best!

wow...you live in india...my parents are from india but i was born here(in canada). just wondering if the heat has any affect on the cakes. anyways good luck with the cake traveling....im afraid to even drive with cake. make sure to post the pic.

Well, my bags are packed, and I am ready to go... Just hope the cakes stay OK.
I hope to take lots of pictures, but will be able to upload only when I am back home.

All the best Karen. You have done your homework well, but there is still lots to do, so again all the best.

I am sailing in the same boat. I am from India, but living in Kuwait. I am traveling to India this Christmas with 2x10" round fruit cakes and 3x6" round fruit cakes + marzipan + fondant + gumpaste + luggage + 2 kids. The big difference is that its not a wedding cake, so i dont really have those jitters. One 10" cake for my parents anniversary which i am looking forward to decorate. I am also carrying everything prepared because i know i will not have the time to prepare anything there, so much to catch up wtih.....

princessjellybean : I guess this world is far too small. I am a PR of Canada, will be settling there soon.... and as for the cakes one need not worry as its winter there... well if it was summer i would not think of fondant, definately not.

Hi All,
My cakes reached home safe... No problems at all. I have four days to go, and my roses are done, all 250 of them. Tomorrow, I cover the cakes with marzipan. Still lots to do, but I am feeling more comfortable about the whole thing now.
No disastrous moments yet, except that I dropped a box of 70 roses. Luckily they had almost dried. I had to do a quick repair job on seven of them... the rest were all fine.
