Carrot Cake Frosting...

I have never made carrot cake before, and a friend of mine wants that for her birthday cake.

My question is: Can you use BC frosting or do you have to use a cream cheese frosting?

I used cream cheese buttercream on mine...the pics are in my photos, and I have also used IMBC and SMBC. I think it would be fine to use regular BC as well.

I also think BC would taste fine. I made one a while back and iced it in cream cheese icing, but used BC for the borders and decorations. It's the "Happy Birthday Mom" in my photos. HTH!

it might be best, fi she already told you she wants carrot cake, to ask what kind of topping. Maybe she only know carrot cake with Cream Cheese topping. You might turn her on to something different by suggesting, you'd like to try something new. Never assume people are going to like what you do.

I think a real cream cheese icing really compliments a carrot cake. Here is what I use:

1# cream cheese
1 stick butter
1 ts. vanilla
1# Confectioners Sugar

I used the crusting cream cheese icing recipe from here and it is great! The trick (thanks to whoever told me this) is to make sure everything is room temp before you make the icing and it will crust great. It tastes great, takes color well and works great for piping. I also like to mix in some toasted pecans bits to make a filling.

You can use it if you're worried about cream cheese icing being too soft. I have yet to try to crusting cream cheese icing but hear it's good. Just make sure she is fine with regualr BC.

If it's for myself, I will use cream cheese. If I'm decorating it, I will use cream cheese filling and BC to ice.

Randa, if you have never done a carrot cake before let me suggest Flavuredfuns (I know that is the wrong spelling sorry) carrot cake recipe from this site. I had never made a cake from scratch before and quite frankly was a bit intimidated by it, but let me tell you---YUMMY! and soooo easy! It has baby food carrots and applesauce in it so you get all the flavor and none of the texture. I took it to a party and it was a HUGE hit! I also used the crusting cream cheese icing, they work wonderfully together and I was able to do the viva paper towel trick and pipe a very pretty boarder.

I just did a carro cake for a party last week and used my icing with Lorann cheesecake flavor in the icing. WOW!!!!!

Randa I'm not sure if MrsMissey's recipe crusts so you may want to pm her if you need a crusting recipe, just to make sure.

....mine recipe is not a crusting icing but you can add some meringue powder if you want it to crust!!
