I am going to be going home for Christmas the week before Christmas and I will be bringing a cake. Only part of the family will be there at the time so I was wanting to bring 2 cakes - one for all of us that are there at the time, and one for those who will be there right before Christmas. So I was wondering if I could go ahead and bring the 2nd cake with me and put it in the fridge for about a week. Do you think it would still be good? Or if I froze it (it would be buttercream) decorated, how long do you think it would take to thaw? It would probably be an 8" double layer cake. Any suggestions would be helpful. Thanks!

I'd freeze it. Then I'd thaw it the morning of the day I planned on serving it. I have no idea how long it would take to thaw, but I'm sure it would be good to go after lunch sometime.
